Ripening Window: mid august -mid july Characteristics: Calypso produces slightly smaller, exceptionally firm, round fruits. It has a brilliant red flesh with a highly defined white core ring. Taste Profile: It is an aromatic, tangy apple. Right off the tree, it can lean quite tart, but it has excellent storability. In cold storage, the acids naturally mellow out over 2 to 3 weeks, unlocking a rich, complex sweetness. It is highly prized for wholesale supply lines due to its long shelf life.
