History & Origin: Released in 1991 by the University of Minnesota (Keepsake x MN 1627). It inverted commercial breeding standards by prioritizing taste and explosive crunch over durability and skin finish, deliberately disrupting the reign of the mealy, tough-skinned Red Delicious. Qualities, Sizing & Market Dominance: It features uniquely massive cells that rupture cleanly instead of breaking apart, releasing an incredible burst of juice. It naturally drives a very large, premium-grade fruit. Because of this texture, it is a massive best-seller in the USA, where consumers consistently pay up to three times the price of conventional apples just to experience it, making it one of the highest income-generating varieties in the industry. Climate & Field Flaws: Highly volatile under Indian monsoon conditions; warm late-summer nights easily stall its mottled bi-color red blush into a dull, greasy green. The tree exhibits weak vigor, demands multiple picking passes because it ripens unevenly, and is highly prone to bitter pit (calcium deficiency) and severe biennial bearing. Picking requires an extra hand-clip for every single stem to prevent its delicate, thin skin from being punctured by neighboring fruits in the bin.
