Developed in Japan during the late 1930s at the Tohoku Research Station in Fujisaki—from which it takes its name—the Fuji apple is a cross between Red Delicious and Virginia Ralls Janet. Released commercially in 1962, it features a dull yellowish-green background with a pinkish-red blush, though modern sports yield a solid red. It is world-renowned for its dense, crisp, and exceptionally juicy flesh, boasting a high sugar content of 14 to 18° Brix, low acidity, and an incredible shelf life in cold storage. Today, Fuji holds the largest global market share of any apple variety, heavily driven by massive production in China where it makes up roughly 75% of their entire crop. Physically, the fruit is typically medium to large with a uniform round to flat-conical shape, and the tree has a medium chilling requirement of around 400 to 600 winter hours.
