The Kiku Fuji apple matures late in the season, typically harvested mid-to-late October. Maturity is indicated by the ground color changing from green to yellow, seed darkening, and an exceptionally high soluble solids content reaching 14–16% Brix. Its flesh density ensures elite storage potential; the fruit retains its signature crunch, juiciness, and intense sweetness for up to five months in standard cold storage and nearly a year under controlled atmosphere conditions. Cultivated on medium-to-strong vigor trees requiring cross-pollinators like Gala, this natural 1990 Italian bud sport mutation thrives at high elevations between 5,000 and 7,500 feet where cool autumn nights trigger its distinct, ruby-red vertical striping. After fulfilling its 400-to-600 winter chilling hour requirement, it yields medium-to-large, uniformly round fruits packed with dense, low-acid, creamy-yellow flesh that resists degradation, remaining crisp and highly marketable long after harvest.
